Abstract

The oil draining process in cassava chips production is still mostly done manually so it is less efficient and produces products with relatively high oil content. This study aims to design and build a spinner machine for draining cassava chips oil with a capacity of 3 liters which is driven by a washing machine dryer dynamo with a direct drive system through the shaft. This machine works based on the principle of centrifugal force, where the cassava chips are rotated in a hollow tube so that the oil is pushed out and separated from the product. The rotation of the dynamo is transmitted directly to the tube shaft without a belt transmission system, so that the machine construction becomes simpler and more efficient. The test results show that the spinner machine is able to drain oil effectively without damaging the structure of cassava chips, resulting in drier and crispier products. The results of the manual draining test rate obtained an average oil drain of 0.085 g / second while for the draining test with a draining machine, the oil drain rate at 113 rpm was 0,7675 g/ second. So the efficiency of draining oil using a draining machine is higher than that of a manual draining machine at 0,6825 g/second. Keywords: Spinner machine, oil drainer dan cassava chips.
